Quick Quesadillas Ingredients (add more if you like):

1/2 c hummus 5oz (≈1 c)

corn 2oz (≈1 c)

kale (stemmed & thinly sliced)

1/2 can (30oz ≈ 2/3 c) black beans (drained & rinsed)

1/2 (≈1/2 c) medium onion (chopped)

1/2 (≈1/2 c) bell pepper (chopped)

1/2 tsp chipotle powder

1/2 tsp garlic powder

1 tsp chili powder

1/2 tsp ground cumin

salt & pepper

4 corn tortillas

salsa
