Plant-Based Pecan and Raisin Granola

Ingredients (makes 4 servings, 1 serving = 1/2 cup):

2 1/2 cups multi-grain slow oats

1/4 cup flax seed & chia seed combination

4 Tbsps sliced pecans

1/2 cup raisins

3 Tbsps + 1 Tbsp pure maple syrup

6 Tbsps fresh orange juice

2 tsps orange zest

1/2 tsp nutmeg

1 tsp vanilla extract

Directions:

1. Preheat oven to 325°F

2. Mix all ingredients into a large bowl.

3. Place a silicon mat or parchment paper on a baking sheet. 4. Flatten the granola on the baking sheet.

5. Bake for 40-45 minutes until brown. Let cool before eating.

Nutrition Facts:

Flax seeds and chia seeds are high in omegas. Pecans contain iron potassium, and fiber. Orange zest is a great source of fiber.

Make It Your Own:

Add or substitute with fresh almond or peanut butter, dried cherries, dried cranberries, or almond slivers. Add or substrate any dried fruits or nuts as you wish.
